It sounds snobby to say but I don't usually order Hainanese chicken outside Singapore because I've found the chicken to be dry and overcooked, so this is a dish I almost never have in Melbourne. However, I was most pleasantly surprised to find that the Hainanese chicken at Gai Wong was perfectly cooked, silky and moist. It was served cool, which a friend of mine did comment on, but that's how it's meant to be and I think it helps retain the beautiful texture of the chicken. Overall, I did think that it needed a bit more oomph in flavour, maybe a bit more chilli and salt in the dishes, but Gai Wong seems to be geared towards making nourishing, healthy food, so maybe they didn't want to over season their food, which I can respect. The service was efficient and friendly, and I will definitely be back for more chicken and to try the dishes that were sold out.
