The best ramen in canberra right now. It is average by sydney standards, but you either drive for 3 hours for better ramen or you take a pretty good bowl here.
The soup was nice. Not a thick tonkotsu like Gumshara though, so don't get your hopes up. The real star of the dish though, were the chashu pieces (not visible in photo) - deliciously smokey pieces of meat balanced with delicately soft layers of fat. They ultimately made an average sort of ramen bowl (by Sydney standards) great.
The addition of wakame in the pork ramen was jarring though - this felt unusual and quite unneeded. It cheapened the dish.
The place had sake and a decent range at that. Ie something thats solid like dassai, rather than the kinda gross like hakushika a lot of places like to flog.
White chaco shines here because they don't fail any of the main elements while having that really delectable smokey chashu and that's all you can really ask for. Right now, this place tops 'Ramen O', in belconnen which recently opened up. While the best ramen in Sydney is going to be made by a Japanese person, Canberra's not Sydney - give the mandarin chattering staff a chance. See less
